Who could resist the colors of black bean and sweet potato soup at this time of year? Not Maria from Two Peas & Their Pod, who combines them with other goodness from roasted red pepper, tomatoes and green chiles in this vegetarian soup that would be a Meatless Monday main course in our house. Add cilantro, if it's your thing, or parsley, for a fresh contrast to the earthy beans. Make the soup ahead, and freeze it for worknight dinners, or double the recipe and serve it for a party, topped with sour cream, avocado and chips.

When the weather turns cool, Susan of FatFree Vegan Kitchen makes big pots of soup, and portions it out for meals throughout the week. This curried cauliflower and sweet potato soup also contains chickpeas, which makes it substantial enough for a Meatless Monday main course, paired with a fresh green salad and crusty bread. Susan stirs in a single tablespoon of peanut butter at the end of the cooking, to enrich the soup while adding only minimal fat. That's an idea I'm going to borrow for my own soup making.

Sometimes you read a recipe that's so simple, so perfect, that you want to make it right away. House of Annie's chicken and kale soup, made with a rotisserie chicken, a bunch of kale, and a bit of garlic, struck me as just the right balance of easy, nutritious and satisfying. After removing the meat from the chicken carcass, Nate used the bones to make a soup stock. Then, in went the kale, the reserved chicken meat, some garlic and a bit of soy sauce. What a great way to get more of those super-good-for-you dark leafy greens into your day!
