In my house, we eat a lot of lettuce. A leaf here, a wedge there, a salad every evening: those heads of romaine add up, and sometimes the equation leaves us with extra lettuce in the fridge. I've grilled it and stir-fried it. And, yes, I've made soup with lettuce. What a revelation! Lettuce morphs into a sweet, sensuous green in soup, and as with salad, you can eat a ton of it at almost no calorie cost. The compost pile need not be your first choice of destination for lettuce leftovers. Look to your soup pot instead.

Seven soups every Saturday: meat-free lentil soup recipes

I adore lentils -- brown, green, red, pink, black, white -- and I love them best in soup, snuggled up against something a little bit spicy. The meaty texture of lentils takes the place of actual meat in so many soup variations, which makes lentil soups perfect for Meatless Mondays, or meatless any days. Some lentils, like the basic brown ones you find in every grocery store, practically fall apart on their own in soup; others might need some encouragement from an immersion blender or food processor. Lentils pair well with almost any vegetable, and don't forget the cheese.

Seven soups every Saturday: soup recipes with ham

Even though I don't eat ham (never have, never will), I know many of you love to cook a ham and cook with ham leftovers. Maybe you're serving a ham for a graduation party, or for Father's Day. I searched some of my favorite food blogs for recipes to share with you, and discovered so many interesting variations on the classic combinations of ham and beans, ham and peas, ham and potatoes and, yes, ham and cheese.
