Thirty minute chickpea stew, from Macheesmo, for Meatless Monday..

As much as I'm not fond of chickpeas, thanks to a dinner party dish that went awry decades ago, that's how much I love kale. As with most new loves, my feelings about kale border on infatuation, and that places this thirty minute chickpea stew from Macheesmo high on my list of vegetarian recipes to try for Meatless Monday. The recipe calls for potatoes, and I think sweet potatoes would be great, too. Canned chickpeas are the real timesaver that make this stew quick and easy.

Recipe for chilled green curry coconut asparagus soup


Fran Lebowitz -- essayist, humorist, and social commentator -- once quipped, "Cold soup is a very tricky thing and it is the rare hostess who can carry it off. More often than not the dinner guest is left with the impression that had he only come a little earlier, he could have gotten it while it was still hot." If you're in the camp that doesn't love cold soup, this recipe for green curry coconut asparagus soup just might change your mind. It's creamy, spicy, tangy and green, vegan and gluten-free, too. I learned a few years ago that you can freeze freshly-picked asparagus spears; they'll lose some texture but will retain all of their peak flavor. Use those frozen spears in this soup on a hot summer day.

Quick and easy caramelized onion soup recipe


Many famous chefs' recipes instruct you to make lots of components before you even get to the main part of the recipe. I really don't like that, and yet, I'm going to do that to you today. You only need to make one component -- caramelized onions -- and it's so easy to make them in the slow cooker (or on the stove top). Not only is this caramelized onion soup quick and easy, but it's also the sweetest onion soup I've ever made. Pair it with a grilled cheese sandwich, or top it with grilled cheese croutons. And you'll have lots of leftover caramelized onions to use in scrambled eggs, pasta, roast beef panini... well, you'll be putting them in everything.
