One of the first recipes I made in my first slow cooker remains one of my favorites, this slow-cooked beef and green chile stew from The Perfect Pantry. Like all slow cooker recipes, you can make it on the stove top in a heavy Dutch oven, so unless you have no cans of green chile peppers in your pantry (gasp!), nothing should stop you from making this stew. The peppers mellow with long and slow cooking, and the meat practically falls apart. Serve it over rice or pasta.

When you come from a large family that gathers often for potluck parties, you're bound to come across some amazing recipes, and one of those potlucks inspired Kalyn of Kalyn's Kitchen to recreate this slow cooker pork and green chile stew. It's perfect for football season; everything goes into the pot for five hours, which means you can start the stew first thing in the morning, and serve it at halftime. I love spicy food, so the fact that this recipe includes Ro*Tel and extra green chiles really appeals to me. Kalyn suggests that, if you're not a fan of very spicy food, you can leave those chiles out or cut the amount in half. This stew sounds like a winning combination of flavors, and the slow cooker makes it easy.

Slow cooker vegetarian curry, from A Year of Slow Cooking

Slow cooker vegetarian curry for Meatless Monday, from A Year of Slow Cooking (on Soup Chick).

For some reason, I've never cooked Indian-inspired food very often, but since I started using my slow cooker, I've discovered that Indian curries and stews adapt well to this method of cooking. Stephanie, of A Year of Slow Cooking, tried more than once before she declared this vegetarian curry a success. The technique couldn't be easier -- dump everything into the slow cooker, and add frozen peas at the end -- and it's a great gluten-free Meatless Monday main dish, served over basmati rice.
