The Saturday Simmer: Soup recipes made with coconut milk
For people who cannot eat dairy products, coconut milk can be a lifesaver. In soups like this unusual black bean soup with coconut and cilantro, from Apron Strings, coconut milk brings its creamy richness to balance the earthy texture of the beans. Many cuisines rely on coconut milk, including Thai, Indian, and Jamaican, so there's a lot to choose from when you're making soup.
These coconut milk-based soup recipes caught my eye this week:
Black bean soup with coconut and cilantro, from Apron Strings
Ginger coconut milk soup, from 101 Cookbooks
Carrot coconut soup, from Shutterbean
Creamy curried cauliflower soup, from The Kitchn
Indian-spiced slow cooker red lentil soup with spinach and coconut milk, from Kalyn's Kitchen
Coconut curry butternut squash soup, from Eclectic Recipes
Cold sorrel and coconut milk soup, from Herbivoracious
Coconut milk mussel soup, from La Tartine Gourmande
Tom kah gai (Thai coconut galangal chicken soup), from She Simmers
Coconut milk soup with wild salmon and kale, from Healthy Green Kitchen
Which will you try first? What intrigues you? Please leave feedback on the original recipe post, and let us know if you've made or adapted any of these recipes. See you next Saturday, and every Saturday, with more soups, stews and chili.

MMM, lentils & spinach & garam masala--I need the Indian-spiced slow cooker red lentil soup! I've made lentil & kale soup, so this one should be just as easy & satisfying.
