The carcass transforms into quarts of stock, and the meat fills any number of sandwiches, stir-fries and soups. The first thing I do when we're done with Thanksgiving dinner is throw the turkey carcass into a pot to make turkey stock. I love making noodle soup with it or congee and have even been know to freeze a carcass and hide it in my suitcase if we're out of town and cooking elsewhere ;).
