Spicy vegetarian chili, from Simply Recipes (on Soup Chick).

Elise of Simply Recipes calls her dad "a committed carnivore", so you know that this recipe he created for spicy vegetarian chili passes muster for those who believe chili must contain meat. With two varieties of beans and chunks of eggplant, zucchini and peppers, this flavorful chili gets its heat from jalapeño peppers and chili powder, both of which you can use in whatever amounts tickle your palate. Think of this as a close relative of ratatouille, with the addition of beans and zestier seasoning. What's not to love?

Being married to a "committed carnivore" myself, I can see why this chili would go so well even for meat lovers!
