Envy isn't an attractive trait, but I must admit that I envy my friends who grow cucumbers in their gardens. Nothing refreshes more than the crunch of a young cuke picked right off the vine. The cucumbers I buy at the farmers' market most often end up in salad, in smoothies, or in my pickling jar. A few lucky ones morph into chilled soups that cool me down on the hottest summer days.

My mom used to grow cucumbers when I was growing up and we used to eat them mostly in salads. I usually add them to salads and pickled them the other day. I haven't tried them in smoothies yet. I do like a good cold cucumber soup - these all sound fantastic, all so unique. Thanks for including my Indian inspired cucumber soup - you reminded me that I need to make this again soon!
Jeanette, whenever I expand my garden (right now, just herbs and tomatoes), cucumbers will be the next vegetable I want to grow. I eat them like candy in the summer.
Those sound wonderfully refreshing. I did not try to grow cucumbers, but since I'm not having luck with anything other than tomatoes, that was probably a good idea on my part.
Mimi, only my cherry tomatoes are doing well this year, so I'm thinking that next summer I need to try a new crop. Cucumbers are a favorite snack, and they make great soups.
