Sofrito chicken stew, from Skinnytaste
When I think of sofrito, the ubiquitous tomato-onion-pepper-sazon condiment, I remember the Puerto Rican friends in Boston's South End who first taught me about the cooking of their island. And when I think of Puerto Rico, I picture bright sunshine, warm weather, and glorious beaches. So, even though the name says stew, to me this sofrito chicken stew from Skinnytaste sounds like a perfect dish for summer, and I can just about taste the leftovers, cold and packed into a picnic basket with some crusty bread to mop up the juices. My lips are smacking.

Sounds delicious. This would be nice to have in the freezer.
Kalyn, you're so right. I'm adding this to the "Eat It or Freeze It" board on Pinterest.
