Seven soups every Saturday: yogurt-based soup recipes

Persian cold yogurt soup with cucumbers, herbs, walnuts and raisins, from Turmeric and Saffron.

By nature, I'm not a yogurt lover, but I'm learning to love yogurt, especially as a base for soup. It's popular in Middle Eastern and Indian cuisines. Mix anything with yogurt -- vegetables, fruit, meatballs -- and add herbs and spices, and you can create endless variations. Chilled yogurt soup refreshes; warm yogurt soup satisfies. If you've never tried yogurt as a soup base, I think you'll be surprised at how creative you can be with it.

Seven yogurt-based soups caught my eye this week:

Abdoogh Khiar (Persian cold yogurt soup with cucumbers, herbs, walnuts and raisins), from Turmeric and Saffron (pictured above)

Spicy turkey soup with yogurt, chickpeas and mint, from Simply Recipes

Creamy leek and yogurt soup, from The Kitchn

Kadhi (Spiced yogurt soup), from eCurry

Cucumber yogurt soup, from Sassy Radish

Chilled tomatillo and yogurt soup, from Sippity Sup

Shish barak: yogurt soup with meat and parsley stuffed dumplings, from Choosy Beggars

Wow, that picture is lovely! I'm not a yogurt lover either, but I can see the advantage to using it in soups. You've given us plenty to choose from--thanks!

I love yogurt and eat it almost every day--especially during blueberry season! I've got lots of cukes; I think Sassy Radish gets the vote from me today! Happy Saturday.

Shirley, isn't this a gorgeous photo? I love the sound of that soup, too.

Alyce, I wish I could bring myself to love yogurt, but I'm trying to incorporate it into my cooking because I don't love it straight from the container.
