Seven soups every Saturday: yogurt-based soup recipes

Persian cold yogurt soup with cucumbers, herbs, walnuts and raisins, from Turmeric and Saffron.

By nature, I'm not a yogurt lover, but I'm learning to love yogurt, especially as a base for soup. It's popular in Middle Eastern and Indian cuisines. Mix anything with yogurt -- vegetables, fruit, meatballs -- and add herbs and spices, and you can create endless variations. Chilled yogurt soup refreshes; warm yogurt soup satisfies. If you've never tried yogurt as a soup base, I think you'll be surprised at how creative you can be with it.

I love yogurt and eat it almost every day--especially during blueberry season! I've got lots of cukes; I think Sassy Radish gets the vote from me today! Happy Saturday.

Alyce, I wish I could bring myself to love yogurt, but I'm trying to incorporate it into my cooking because I don't love it straight from the container.
