Estonian zucchini and cheese soup, from Nami-Nami.

Without Pille's wonderful English-language blog, Nami-Nami, most of us would know far less than we should about Estonian cuisine. I love the story behind this recipe: a reader wrote to Pille after she'd heard a story on National Public Radio about a particular zucchini and smoked cheese soup, a popular Estonian pub dish. In the comments on the original post, someone suggested substituting smoked Cheddar for the Estonian smoked cheese; I think Dutch gouda would be good, too. If you're starting to see zucchini at your local farmer's market, or your garden is about to overflow, now's the time to try this recipe.
