I adore lentils -- brown, green, red, pink, black, white -- and I love them best in soup, snuggled up against something a little bit spicy. The meaty texture of lentils takes the place of actual meat in so many soup variations, which makes lentil soups perfect for Meatless Mondays, or meatless any days. Some lentils, like the basic brown ones you find in every grocery store, practically fall apart on their own in soup; others might need some encouragement from an immersion blender or food processor. Lentils pair well with almost any vegetable, and don't forget the cheese.

I adore Lentil Soups especially during the winter months, coming from the Caribbean I used to add squash in mine, but next time make lentil soup I will add some of these ingredients, the coconut and ginger sounds yummy.
Lentil soup has to be my favorite of all time!

Kalyn, lentil soup was the first soup I learned how to make, and it was a mainstay all through college years. It's one of my favorites, too.
