Slow Cooker Soup: Spicy ground beef and bean soup with cabbage and spinach, from Kalyn's Kitchen
This slow cooker recipe for spicy ground beef and bean soup with cabbage and spinach, from Kalyn's Kitchen, defines the term "meal in a bowl." Though Kalyn calls it spicy, the heat comes from a pinch of red pepper flakes -- optional, but you know I'd put in a big pinch! One great tip I learned from this recipe: rinse the ground beef after you brown it, to reduce the amount of fat in the finished soup.
Remember: Any slow cooker soup also can be made the old-fangled way, in a heavy pot on the stove top.
I make cabbage soup similar to this and it really is a meal in a bowl. I love making a giant batch and freezing individual portions. AND, I really appreciate your tip for rinsing the beef before browning. I usually brown my meat and lay it out on folded up paper towels to soak up the grease. Your way is much "cleaner." Thanks for the tip!
Kim, I love that tip for getting the fat out of the soup, too. And with so much flavor in this soup, no one will miss the extra fat!
