Slow Cooker Soup: Spanish potato and green olive soup, from Kahakai Kitchen


Olives in soup? Yes! The combination of olives and potatoes is oh-so-tapas, and this recipe adds real Manchego cheese for that extra bit of Spanish flair. Deb of Kahakai Kitchen adapted this recipe for Spanish potato and green olive soup from one of my favorite slow cooker cookbooks. This looks like one of those deceptively simple recipes with few ingredients combining to make a complex and really interesting flavor.

I'm intrigued by the idea of soup with green olives. Wonder how it would work with sweet potatoes?
