Slow Cooker Soup: Calico bean soup with smoked sausage, from Eat at Home
Beans and slow cookers belong together. Beans and sausage belong together. This recipe for calico bean soup with smoked sausage, from Eat at Home, brings it all together, and it couldn't be easier. Give the beans a quick pre-soak (or don't -- you can put the dry beans right into the slow cooker, and just increase the cooking time), and toss them into the cooker with the remaining ingredients. Use any type of smoked sausage you prefer. A mix of beans makes it fun.
Remember: Any slow cooker soup also can be made the old-fangled way, in a heavy pot on the stove top.
This sounds like such a good slow cooker soup! And I think you are brilliant to remind people that slow cooker soups can be made on the stove.
Kalyn, I hope everyone gets into slow cooker cooking as much as I have, but it's good to remember that a Dutch oven on the stove is the original "slow" cooker! It's chilly here in Rhode Island this evening, and now I wish I'd put a batch of this soup on to cook for dinner.
Beans should be cooked in the slow cooker because if it is cooked with ordinary cooker, it loses its nutritional value by fast and high heating temperature. Many thanks for the tasty slow cooker recipe!
