Seven soups every Saturday: Mexican soup recipes

Happy Cinco de Mayo, everyone! In the house where I grew up, we never ever ate Mexican food, so I didn't learn about the wonders of south-of-the-border cuisine until I went to college in a town with a Mexican restaurant. That's the first place I tasted sopa de lima (lime soup) and tortilla soup with chicken -- hearty, healthy, and affordable for a college kid. Mexico is a country proud of its regional culinary traditions, and you can find all of those traditions represented in the variety of soups (vegetable, bean, meat, spicy, creamy) on restaurant menus and in home kitchens.

Seven Mexican soup recipes caught my eye this week:

Creamy Mexican chayote soup, from FatFree Vegan Kitchen

Sopa de lima (Mexican lime soup), from Homesick Texan

Caldo de res (Mexican beef soup), from What's Cookin, Chicago?

Mexican vermicelli soup with chicken and vegetables/sopa de fideos con pollo y verduras, from Mexico in My Kitchen

Squash blossom and corn soup, from What's Cooking Mexico

Caldo xochitl (Mexican hot flower soup), from Budget Bytes

Albondigas soup, from Simply Recipes
