Seven soups every Saturday: Mexican soup recipes
Happy Cinco de Mayo, everyone! In the house where I grew up, we never ever ate Mexican food, so I didn't learn about the wonders of south-of-the-border cuisine until I went to college in a town with a Mexican restaurant. That's the first place I tasted sopa de lima (lime soup) and tortilla soup with chicken -- hearty, healthy, and affordable for a college kid. Mexico is a country proud of its regional culinary traditions, and you can find all of those traditions represented in the variety of soups (vegetable, bean, meat, spicy, creamy) on restaurant menus and in home kitchens.
