When I'm consciously trying to improve my health -- building strength, detoxing, beating a cold or flu, or general healing -- I add fresh ginger to everything. Well known as an anti-inflammatory and a motion sickness preventative, ginger boosts the immune system and might even have some cancer-fighting properties. And, most important to soup makers, it tastes great, adding pungency but not heat, and pairing well with almost anything you'd put into a soup pot.
