Seven soups every Saturday: shellfish soup recipes

Clams, mussels, oysters, scallops, shrimp. Here in New England, they all spell chowder, because that's our soup, but don't feel limited by our provincialism. Popular in all coastal countries, shellfish soups take on regional flavors and spices, combining them with locally available seafood to create famous specialties like bouillabaise, cioppino and tom yom koong. Before you shop for shellfish, visit the Monterey Bay Aquarium's Seafood Watch site to check their seafood recommendations, and print one of their handy pocket guides to keep in your market basket.

Kalyn, I love soups with shellfish, and we're so lucky to have local shellfish here in New England.
