Seven soups every Saturday: chicken soup recipes

Gluten-free chicken soup for body and soul, from Gluten-free Goddess

If you've already filed your annual tax returns, you might not suffer the headaches, back aches, or generally upset stomachs many of us could experience this weekend, as we put the finishing touches on that most dreaded of all paperwork. Depending on how organized you are, this particular weekend could be a wee bit stressful. Not to worry, however; a great bowl of chicken soup makes everything better. Whether you like your chicken soup spicy, or salty, filled with vegetables or seafood or chunks of chicken, you can make a pot today and it will see you through an entire weekend of adding and subtracting.

Seven chicken soup recipes caught my eye this week:

Quick fiesta chicken soup, from Cooking on the Side

Aguadito (Peruvian chicken soup), from A Cozy Kitchen

Gluten-free chicken soup for body and soul, from Gluten-free Goddess

Old fashioned chicken noodle soup (slow cooker recipe), from A Year of Slow Cooking

Chicken soup with collard greens, carrots and brown rice, from Kalyn's Kitchen

Chicken soup with coconut milk and lemongrass, from Leite's Culinaria

Easy chicken and rice soup, from Two Peas & Their Pod

Nothing is as good as chicken soup when you need some comfort in a bowl!

How did you know about the taxes, Lydia??? Aaargh. I'm not usually this late, but lots going on has necessitated it this year. I'd say our taxes are mostly done, but pulling out stray receipts here and there to get the maximum "credit," so to speak. Maybe I need to make one of these chicken soup recipes tomorrow to make the wrap up go more smoothly! ;-)

Thanks for the roundup ... I do love chicken soup!

Kalyn, I agree. And, having grown up on one kind of chicken soup only, I'm really enjoying thinking of it in a whole new way in my own kitchen.

Shirley, I'm so sorry you're suffering the paperwork woes this weekend. Chicken soup for everyone!
