Seven soups every Saturday: soup recipes with fresh or frozen peas
In the house where I grew up, peas meant one of two things: Le Sueur tiny peas in a can (remember the silver label?); or, supernaturally bright green peas in a freezer bag with supernaturally bright, uniformly square orange carrots. It's no wonder I never quite fell in love with peas when I was a child. However, there's always a bag of peas in my grown-up freezer -- good, organic, individually quick frozen (IQF) peas -- and one way I use them is in soup. A handful here, a cupful there, tossed in late in the cooking for great texture or blended to a glorious green silkiness, in hot soup or chilled... well, now that the first day of Spring is less than two weeks away, I'm finally on board with peas.

I went to make a rice pilaf yesterday and discovered I had no frozen peas!!! I couldn't believe it, I never let myself run out of those!
