Seven soups every Saturday: potato soup recipes


What's more budget-friendly than potato soup? And what's more belly-filling than potato soup? Potato soup gets a bit of a bad rap, for being bland and boring. Oh, how wrong that is! Think of potatoes as the foundation for any add-ons, mix-ins, herbs or spices, bacon or clams, chicken or cheese. You can purée the potatoes for a thick soup, or leave them chunky in a skinny soup, or smash some of them against the side of the stock pot with a wooden spoon to get just the texture you want. What's not to love?

CJ, nothing bland here! I love to use potato as a base of all types of aggressive flavorings.

I've been waiting for a good potato soup -- and all of these are inspiring. I made the Spinach, Potato...and Carrot as a base, with kale and broccoli needing to be used for the green, likewise some whey... not the same soup, but a great starter that I can go back to over and over.

Cookin' Canuck, I love your soup with fennel, and I hope you find a few other variations to try here.

Susan, what I love about soup is that even following a recipe, you'll never make it exactly the same way twice. And what you come up with often is better than the original. Keep experimenting!
