Seven soups every Saturday: butternut squash soup recipes


Of all the squashes in all the world, butternut squash wins the people's choice award. Perhaps we like its natural sweetness, brought out by roasting. Perhaps we like its mild flavor that mellows into soups and stews, and pairs well with almost any fruit or hot pepper or protein. Or, perhaps, we just like its voluptuous shape. For soup, I like to buy ready-to-cook butternut squash that's been peeled and cubed; my supermarket stocks it in the produce section all winter, and it definitely speeds up my soup prep.

Love roasted butternut squash. That Chipotle Chili Butternut Squash soup sounds especially appealing.

You really found an intriguing stash of soups for today. Lots to work on!
Butternut is a winner for me because it is so easy to work with. Easy to peel (ever try to peel an acorn squash -- no worth the trouble!), and sometime doesn't need to be peeled. No risk of life and thumbs just to cut it in half... and good to eat.

Great collection of recipes this week. I am realizing that I've never made a pureed butternut squash soup, even though I love butternut squash!

Jeanette, I'm a chipotle addict, and I can't wait to try Food Blogga's soup!

Susan, I do love the sweetness of the butternut, and because I'm also in a bit of a butternut soup rut, I'm looking forward to trying some of these new flavor combinations, too.

Kalyn, pureed squash soup is like silk flowing down your throat. You'll love it. And you can make "creamy" soups without any cream.
