Seven soups every Saturday: cheese soup recipes

If I say cheese and soup, you immediately think of broccoli, don't you? It's a classic combination, but not the only one. Think beyond cheddar to goat cheese, smoked cheese, havarti, Swiss... almost any cheese turns a soup from good to gooey to great.

I think Creamy Swiss Chard and Goat Cheese Soup is calling to me! Great ideas.

Since goat cheeses are my cheeses of choice, I'll start with the Creamy Swiss Chard and Goat Cheese and go on from there subbing goat cheese where I think it appropriate. All of the soups sound wonderful.

The cold and the snow have finally seeped into Wisconsin. Nothing better on a cold, wet night than a big, hearty bowl of soup. Cheese soup. Every one of these make my mouth water.

Elle, we're all thinking along the same lines!

CJ, Wisconsin and cheese soup go hand in hand, don't they? We are having a warm spell here in Rhode Island, but I know the cold and snow aren't far away.
