Seven soups every Saturday: spinach soup recipes

Hearty spinach and sausage soup, winter comfort from Pinch My Salt.

Something about spinach makes me feel strong (is it the Pop-eye thing?), and after the marathon of cooking over the holiday weekend, I need to recharge my batteries. Of all the leafy dark greens, spinach tops the list for me. Rich in Vitamin C, spinach tastes great raw or cooked, and any residual bitterness mellows in the cooking process. I always feel virtuous when I eat spinach.

Seven spinach soup recipes caught my eye this week:

Italian white bean and spinach soup, from Sunday Nite Dinner

Hearty spinach and sausage soup, from Pinch My Salt

French green lentil and spinach soup with cilantro yogurt, from Former Chef

Red lentil and spinach soup, from Jane Spice Recipes

Creamy spinach soup, from La Fuji Mama

Crockpot recipe for double lentil, sausage, brown rice and spinach soup, from Kalyn's Kitchen

Chickpea, spinach and tomato soup, from Herbivoracious

Looks great! I agree that spinach is great in soups. This one is definitely one of my favourites:

I love stirring spinach into soups at the last minute. It cooks so quickly and adds an extra boost of color and nutrition. The Red Lentil and Spinach Soup with Indian spices sounds especially appealing right now.

I am a big fan of spinach in soup and pasta dishes and these soups all sound good today!

Janet, your recipe looks really interesting, too.

Jeanette, I love adding spinach at the last moment, so it doesn't cook completely.

Kalyn, spinach is definitely my preferred dark, leafy green.
