Seven soups every Saturday: spinach soup recipes
Something about spinach makes me feel strong (is it the Pop-eye thing?), and after the marathon of cooking over the holiday weekend, I need to recharge my batteries. Of all the leafy dark greens, spinach tops the list for me. Rich in Vitamin C, spinach tastes great raw or cooked, and any residual bitterness mellows in the cooking process. I always feel virtuous when I eat spinach.

I love stirring spinach into soups at the last minute. It cooks so quickly and adds an extra boost of color and nutrition. The Red Lentil and Spinach Soup with Indian spices sounds especially appealing right now.
I am a big fan of spinach in soup and pasta dishes and these soups all sound good today!
