Seven soups every Saturday: soup recipes with sausage

Thai sausage soup

'Tis the season -- the season of cooler nights, sweaters pulled out of storage, and fires in the fireplace. 'Tis the season, also, for hearty soups made from earthy ingredients: squash, potatoes, lentils and beans. Nothing perks up the flavor these ingredients better than sausage. The seasonings in sausage, no matter the variety you choose, can help point the rest of your soup in the right direction. An Italian turkey sausage seasoned with fennel seed suggests adding fresh fennel to the pot. Garlic sausage wants to party with, yes, more garlic. And andouille sausage loves other foods from Louisiana, like shrimp and rice. These days, even the smallest grocery store carries a nice variety of fresh and pre-cooked sausage, and many farmers' markets offer small-batch artisanal products, so have fun mixing and matching with the seasonal harvest.

These are some nice hearty soups - the Thai soup has me intrigued...I've never seen or heard of Niman Ranch's Thai sausage.

I am inspired! Just took a package of sausages out of the freezer left over from our family reunion in September. Not sure if they are Italians, brats or a combination of both. Someone (my mother) bagged them without lableing and sent them home with us. (Love you mom!)

Going to wing it and make a s[icy sausage, potato or bean and chard based soup. We'll see what developes as I start cooking. *L*
