White beans give soup great mouth feel; when puréed, they're creamy and rich, and when left whole, beans retain a little bit of chewy texture. Both large cannellini beans and small Navy beans absorb the flavors around them, and pair particularly well with smoky meats like bacon, sausage or ham. Tomatoes, rosemary and basil also bring out the best in beans.

I love cannellini beans - I agree, the creaminess of these beans makes them a favorite in soups and hummus. Nice collection of soup recipes - it's getting cooler and I've been starting to make soups again, so will be referencing this and your site a lot!
