Seven soups every Saturday: soup recipes with basil

Every week, I pinch back the basil in my herb garden, and still the plants are two feet tall and producing more fragrant leaves than last summer. I'm already making and freezing pesto. Lots of pesto. And I know exactly what to do with the rest of my harvest: make soup, of course. Basil loves to snuggle up next to beans, chicken, tomatoes and garlic, and most of the soups you'll make will freeze well. Imagine opening a container of summer soup in the midst of a bleak winter, and having the aroma of fresh basil greet you. Wouldn't that be heavenly?

I've already made one harvest load of pesto, so these recipes are just what I need now!

I love basil and plant several plants in our garden. So far this summer, I have pureed 8 1 cup containers of plain basil and olive oil with 1 garlic clove [ready to add to any recipe or for more pesto]. I have also made an additional 8 containers (about 3/4 cup each of basil pesto with cheese and pine nuts [delish].

But I must tell you that the first soup recipe listed on this page [Creamy zucchini and basil soup, from FatFree Vegan Kitchen] I have made several times this summer from FatFree Vegan Kitchen and just love, love, love it to pieces. Everyone who I give some to loves it as well -- so easy to make and delicious. Today I will be making the Raw tomato basil soup, from Healthy Green Kitchen [sounds so refreshing].
