A couple of months ago, on our Facebook page, people were discussing whether cold soups are really just smoothies in disguise. I get it: some folks don't love cold soup, or cold coffee, or cold pasta. So, what could be more perfect for summer than soups that can be served hot or cold?

Delicious round-up for the summer! I recently made a nice chilled (or warm) orange-beet soup with miso and dill. I agree, it is nice to have that flexibility with a delicious soup. :)
I was never a cold soup fan until I finally had Gazpacho (a few years ago) and then I finally "got it." These soups all sound interesting!
I make a cauliflower soup with sauted onion and chicken broth and 2% grated cheddar. Puree and serve. I found out by accident that it is better iced cold.
I also make a gazpacho with consomme added. Gives it a little body and wonderful flavor
Janet, orange and beet is one of my favorite combinations -- love the acid and sweet together.
Kalyn, there is nothing better than ice cold gazpacho. I could eat it every day in the summer.
Janet, I'm no fan of cauliflower, but I love tasting soups straight out of the fridge and discovering quite by accident that they are delicious when they're cold. Often the texture changes, too, and they thicken up really nicely overnight.
I'm definitely a hot soup person.
