Seven soups every Saturday: beet soup recipes
For 36 years, my husband Ted has believed that I don't love beets. Not true. I do love them, but he over-the-moon loves them, so I'm happy to give him the lion's share of whatever I cook with beets. The nice thing about making beet soup is that there's always enough beet to go around. Beets are rich in antioxidants, and the longer they're cooked, the more those good nutrients leach out. So soups made with beets should be quick to cook. Naturally sweet, beets also take well to savory flavorings, and beet soups are delicious hot or cold. There's more to beet soup than borscht.

I love beets, I just wish they had less sugar, sigh. I think the only beet soup I've made is borscht, but these sound good!
