Seven soups every Saturday: yogurt-based soup recipes

Spicy turkey soup with yogurt, chickpeas and mint, a light and tangy soup from Simply Recipes.

To be honest, I'm not a yogurt lover. My husband Ted snacks his way through countless yogurts flavored with chocolate or mango or superfruits, but I have to work hard to get one spoonful down. Except in soup. Blend plain yogurt with some broth, vegetables, spice, heat, and I love the way it thickens without the heaviness of cream. I love it hot, and I love it cold, as long as it's in soup and not just naked on my spoon. Go figure.

Seven yogurt-based soups caught my eye this week:

Spicy turkey soup with yogurt, chickpeas and mint, from Simply Recipes

Kadhi (spiced yogurt soup), from eCurry

Spinach and yogurt soup, from Cooking with Amy

Chilled tomatillo and yogurt soup, from Sippity Sup

Shish barak: yogurt soup with meat and parsley stuffed dumplings, from Choosy Beggars

Chilled cucumber yogurt soup shots, from Christine Cooks

Chlodnik (Polish cold yogurt soup with beets), from Coffee and Vanilla

I'm not sure I've ever used yogurt in soup, but I've enjoyed a dollop of it on top of lots of soups, so it makes sense!

I have yogurt every single day, I think all the probiotics are healthy or something like that. I don't use it much in soups though!

Kalyn, yogurt makes such a great base for summer soups. Think tzatziki in a soup bowl!

Pam, I know that yogurt is super healthy (remember those commercials with the 100+ year old woman from Russia?), but I just don't like the taste. Except in soup, where I love it. Not logical!

Lydia, I had no idea you linked to my cucumber yogurt soup. Thank you!! I really need to pay more attention... :>)
