Seven soups every Saturday: Japanese soup recipes
For the past week, Ted and I have had a very special house guest. Nagisa is the teenage daughter of our friend Rika and her husband Ichiro, who live in a tiny village in western Japan. After graduating from high school in a suburb of Vancouver, where she spent this year as an exchange student, Nagisa came to Rhode Island to hang out with us and see the sights. We did go to a sushi restaurant one day, but apart from that, it was all-American food all week.
Now that Nagisa is on her way home to Japan, I'm craving soups from her country. Seven Japanese soup recipes caught my eye:

Most of my experience with Japanese soups is just what I've had as an appetizer before sushi, but I do love the light flavors and crispy vegetable combination. I am sure Nagisa had a wonderful introduction to the U.S. from her visit with you.

Kalyn, I do love starting meals in Japanese restaurants with a small bowl of miso soup. We had great fun with Nagisa and I hope she returns to visit soon.
