Seven soups every Saturday: lentil soup recipes

Recently I received a gift of several baggies filled with lentils of different sizes and colors, leftovers from a friend's major pantry cleanout. That's my kind of gift! I emptied each bag into a pantry jar filled with like-minded lentils, and immediately started thinking of soups to make. My long-time favorite is quite simple -- lentils, tomato, onions and carrot, and cumin -- and I've been using the slow cooker more often, as it breaks down the lentils into a creamy texture, without any intervention by my wooden spoon.

I'm dizzy from today's choices! I've brought out my "Crock-ette" -- the one quart member of the family. I think it takes longer (not a secure lid), but I'm trying to train it to be my silent soup maker. Lentil today.

There is no doubt about it, lentils are one of my most used soup ingredients. Just love them in every type of soup and I see some good ones here. Thanks for featuring my soup too!

Susan, my smallest crockpot is 4-quart, but I've been thinking about getting a mini so I could make just a few servings of soup at a time. And I love the ones where the lid doesn't fit, because it lets the cooking aroma into the house!

Kalyn, thanks for so many inspiring soup recipes on your blog.

Brenda, I love your recipe for Egyptian lentil soup. It's one of my favorites.

What's lacking when the lid doesn't fit is an effect somewhat like a pressure cooker, especially for legumes. My larger Crockpot has a misfitted glass lid, but that seems to make more of a vapor seal -- I recently used yellow split peas for your yellow lentil & spinach soup and left it for 6 hours to become really smooth. Tradeoffs! (This lid on the small pot is plastic -- not glass.)
