Seven soups every Saturday: Chinese soup recipes


In the house where I grew up, a Jewish-American middle-class close-to-New-York house, my parents believed that the soup that cured everything was chicken soup, but that chicken soup didn't have to be Jewish. More often than not, the chicken soup that made me feel better came from our local Chinese restaurant. Egg drop soup topped the list, but as I got older, I graduated to wonton soup and then, finally, to hot and sour soup. It wasn't until recently that I figured out why Chinese soups really do make me feel better; the broth is simmered with fresh ginger root, which is famous for its healing properties. And all these years, I thought it was simply because Chinese soups taste so good.

After 4 days on the road, I came home and made a pot of chicken stock from Monday's roast chicken carcass. Last night I was craving soup and vegetables, so I made a chicken chickpea and kale soup. I have enough stock left for another soup and every one of these looks fantastic. How will I choose just one? I guess I'll have to roast another chicken......

In addition to the healing effect of ginger, hot and sour soup has HOT -- those chilis'll cure just about anything! and now I'm craving it...

What a great topic! I often make Chinese Chicken and Corn soup for my youngest son when he isn't feeling well - he is a great believer in it. Thanks, Lydia - I am going to try every one of these recipes!

CJ, I wouldn't want to choose just one Chinese soup, either! Wouldn't, and couldn't. Let us know what you end up making.

Susan, it's true that I love the hot in hot and sour soup and believe it can heal just about anything.

Lydia, I made the egg drop soup becuase it was the easiest and I had all the ingredients on hand. Now I have a shopping list and am roasting another chicken for dinner tonight. *L* Oh, how I love soup.

Funny. I just bought some ground pork at the Asian grocery store today because I intended to make wonton noodle soup too.

I like to add a few pieces of dried shrimp into Chinese soup stock. Gives it a nice savoriness.

Oh Lydia, you are truly speaking my language. Not only could I eat soup for every meal, but Chinese soups are full of the flavors I am consistently drawn to. Wonderful list!
