Seven soups every Saturday: soup recipes to make ahead and freeze
If January hasn't been designated Soup Month by whoever designates these things, it surely should be. After all, we already have National Soup Swap on January 22, and it's obvious here in New England that the confluence of cold weather, dark days, and a backlash against heavy holiday meals makes this the perfect month for soup. Concocting a huge vat of soup, the kind that takes all day and fills the house with the aroma of onions and vegetables, is both fun and satisfying, but often leaves plenty of leftover to go into the freezer. Most soups freeze well, and defrost with little or no loss of taste or texture. Cream-based soups are the exception. Those with a high proportion of milk or cream sometimes don't hold up as well as broth-based soups.
Seven make-ahead-and-freeze soups caught my eye this week:
Garlic lover's white bean soup, from Farmgirl Fare
Winter vegetable soup, from In Good Taste
Slow cooker beef barley soup, from Andrea Meyers
Chicken soup for body and soul, from Gluten-Free Goddess
Chicken, black bean and cilantro soup, from Kalyn's Kitchen
Crockpot pasta fagioli soup, from A Year of Slow Cooking
Coconut red lentil soup, from 101 Cookbooks

Thanks for posting (someone found your blog & forwarded to me)... I make 2 big pots of soup every Saturday night in January (one veg & one non-veg) and invite friends & neighbors over for a bowl. It's a month-long event we've done for 8 or 9 years.
I will be checking back all month when looking for additional recipes! You're right - January should be Soup Month!!
Dang. Every single Saturday, I think, "i've got to take a picture of seven soup bowls" one of these days..
January should be soup month for so many reasons. Most of all, warm, soothing, filling and delicious.
I am so happy to find this blog....I love soups and I love making soup....I just told my hubby last night that we would be having a different soup at least once a week...by different I mean something that I haven't made us before. Thanks for the blog...I will be spending a lot of time here...
