Cookbook: Skinny Soups

Skinny Soups cookbook, a barn sale find.

Early in December, my husband Ted and I hosted a yard sale fundraiser in our barn. Most of the items for sale related to cooking or baking: kitchenware, dishes, and cookbooks. Of course I was the earliest of early birds, and I snatched up Skinny Soups: Over 100 hearty low-fat nutrition-rich calorie-wise soups by Ruth Glick and Nancy Baggett. Written almost two decades ago by two prolific cookbook and magazine writers, Skinny Soups employs a few basic strategies to boost the nutritional value of soups, such as eliminating butter and cream, and reducing the salt.

The recipes include limited nutrition information, and there are no photos (fairly common for cookbooks of this era, as technology didn't permit the quality digital photos we have today), but several soups tempt me in this cold winter weather. A few call for bouillion cubes; I'll replace that with homemade stock. And four of the six are vegetarian, or can be with the substitution of vegetable stock.

Please help me decide which to try first:

  • Garbanzo and couscous soup
  • Spicy barley soup
  • Portuguese style fisherman's pot, with mussels and potatoes
  • Spicy beef and cabbage soup
  • Sesame noodle soup
  • Red onion and apple soup with curry

Keep an eye out at yard sales and thrift shops. They're great sources of cookbooks, as well as soup bowls and tureens for serving.

Spicy beef and cabbage (I love anything cabbage)! The sesame noodle sounds yummy too!

I have another cookbook by these same people call Skinny Sauces - love it so I'm sure the soups will be great!

It's snowing again, and spicy barley sounds just right... or sesame noodle?

I've had really good luck tracking down older books via used book sources on the internet if anyone's looking for this book -- I especially like betterworldbooks.com, because they support literacy and library causes.
