Seven soups every Saturday: leftover turkey soup recipes
After Thanksgiving -- after the turkey, after the stuffing, after the potatoes and green beans, after the pie -- comes the dilemma: what to do with all of those leftovers? First, make turkey stock from the carcass, an onion, and a couple of carrots. Then, if you have courage, throw all of the leftovers into a pot with a bit of that stock, and soup will happen. It will. I promise.

I've made the turkey with sweet potato, black beans, and lime, twice. My husband and I liked it very much, so I made it again for a family gathering, with good results. Leftovers in freezer, awaiting another lunchtime.

I recently had a soup "marathon" of sorts when I was getting over a sinus infection and couldn't taste much of anything: Monday - chicken noodles soup; Tuesday - potato soup, Friday - beef, barley, and vegetable soup; Sunday - vegetarian butternut squash soup. We had a Soup Lunch fundraiser on Nov. 16 at my office: about 12 crock pots of soup and chili for lunch along with crackers, toppings, drinks and cookies all for a donation to the Relay for Life cause. I contributed the butternut squash soup. Over $800 was raised in just 2 hours!

Teresa, having a soup fundraiser is a great idea. My friend Michelle did that in California, partnering with a ceramics place to make and decorate the soup bowls.
