Seven soups every Saturday: tomato soup recipes

I know what you're thinking, and you're absolutely right. It's not tomato season in Rhode Island, so why is she writing about tomato soup? There may be no farm-fresh tomatoes at the farmers market yet, but the weather is still tomato-soup-and-grilled-cheese chilly, so I'm digging into the pantry for canned tomatoes and into the freezer for the last of last summer's slow-roasted tomatoes. If you didn't put up your own tomatoes, take the best of what you find at the grocery store and slow-roast in the oven for several hours to concentrate the flavor. Then, go forth and make delicious, comforting, out-of-season tomato soup.

Kirsten in Falls Church, Virginia, sent today's photo of seven bowls, with this note: "Many military folks who have served overseas, like I have, collect these Polish pottery bowls. When my mom and dad visited my brother in Austria, I gave my mom the task of finding bowls 'useful for anything from cereal to soup to ice cream' and she came back with 20 of these, in various designs. My brother brought me lunch plates that are similar (the Polish pottery factory outlet was a train ride away so a fun trip for him) and it is so much fun to eat off such beautiful, incredibly sturdy dishes. In fact, the only ones that have broken were when the kids couldn't decide whose job it was to take them downstairs and they both let go, and the plates landed on the edge of the wooden step and didn't survive! But in a single sentence: these are hand-painted Polish pottery bowls that brighten my family's meals."

Do you believe it, I've never made tomato soup. Soup with tomatoes, plenty of times, but tomato soup, not once.

Not only am I of 100% Polish descent, but we have a dedicated shop (called Polish Pottery!) here in my little town of Monticello in East Central Illinois. It's beautiful stuff, as is tomato soup. I just planted my twenty tomato plants yesterday, so in 72-90 days I will be able to make it fresh again!

Wow, those bowls are beautiful.

I love tomato based soups. They are pantry friendly, qucik to put together and delicious. All you really need is good quality canned tomatoes and you're ready to start cooking.
