Seven soups every Saturday: coconut milk soup recipes
The first coconut soup I ever loved -- tom kha gai -- most often comes at the beginning of a meal, but for me it's the centerpiece: a rich broth, lots of galangal, lemongrass, cilantro, chunks of chicken, a bit of chile pepper. It's a masterful amalgamation of flavors, a classic soup, a spectacular soup, but it's not the only soup that gets its body from coconut milk.

Wow, so many interesting variations of soup with coconut milk. I remember vividly when I first tried tom kha gai and how much I loved it!
I just made a variation on the spinach soup with coconut milk and chicken: WOW! It's fantastic!! I happened to have on hand a container of College Blend Culinary Broth Thai Coconut Curry ( from Job Lot!!) and used it as a base. Can't wait for lunchtime!
