Seven soups every Saturday: asparagus soup recipes

Sevensoupbowlsgreenillo

I get cravings for asparagus soup. Serious cravings. Our growing season is short, six weeks at most, and I'm completely spoiled by having Falls Creek Farm less than an hour's drive from my house. Falls Creek supplies asparagus to many local restaurants, and they welcome visitors into the sorting room to select asparagus picked and sorted by size that morning. You can freeze asparagus, and although it loses a bit of texture and firmness, it's perfect for soup. There's nothing quite as wonderful as opening the freezer in mid-winter and finding a pound or two of asparagus tucked away.

Seven asparagus soups caught my eye this week:

Pan-roasted asparagus soup with tarragon, from Bitten

Creamy asparagus soup with crab, from Cooking with the Single Guy

Asparagus soup with parmesan, from Mighty Foods

White bean cream of asparagus soup, from Lisa's Kitchen

Chilled asparagus orange soup, from A Veggie Venture

Asparagus creamed soup with gremolata, from The Nourishing Gourmet

CrockPot cream of asparagus soup, from A Year of Slow Cooking

Find more delicious asparagus soups with Food Blog Search. Come back every Saturday for seven soup recipes to enjoy any day of the week.

[My husband Ted contributes to my food blogs in many wonderful ways, including tasting all of the recipes to make sure they are good enough for you. He's also the talent behind the illustration of the soup bowls. I'll be having fun with these little bowls on most Saturdays, and from time to time I'll share photos of more of my soup bowl collection, too.]

Hi Lydia,
We're just now starting to see the spring asparagus come in. Love all of the ideas/links you've listed. Hadn't considered so many things you could do with a base of asparagus!

I wish I had an asparagus farm at my back door - wouldn't that be heaven?

I have been having cravings for asparagus soup, too! This has never happened before, but it hit hard - so I'm glad to see these recipes. Love the bowls, too!

It finally feels like spring is here and what better way to confirm it than asparagus soup. They look so good too. Great choice!

I love asparagus Lydia. If only I can get my hub to enjoy them too. Think I'll just make asparagus soup just for me and Little One. :)

Btw: love the one with crab meat. Sounds heavenly.

Can you believe I've never made asparagus soup even once? I need to try one of these great-sounding recipes.
