Soup Chick favorites: three cauliflower soups

When Pantone declared 2013 the year of emerald green, they didn't consult me. If they had, they would have known that this is The Year I Learn to Love Cauliflower. What better way to start than with three favorite flavor-packed cauliflower soups featured here on Soup Chick? One of the recipes is vegan, another vegetarian, and the third is topped with both bacon and gorgonzola cheese.

Roasted cauliflower and cheddar soup, from Two Peas and Their Pod, would be perfect for Meatless Monday.

Curried sweet potato and cauliflower soup, from FatFree Vegan Kitchen, gets a creamy finish from peanut butter.

It's hard to resist the idea of this creamy cauliflower soup with bacon and gorgonzola, from Steamy Kitchen.

Yaay for cauliflower. I love it, but I'm not sure I have ever made soup with it. Must remedy that.

Kalyn, I have a few more soup recipes to try, and then I'm moving on to roasted cauliflower.
