Roasted cauliflower and cheddar soup, from Two Peas & Their Pod

I'm not a fan of cauliflower. There, I've said it. Maria of Two Peas & Their Pod says her husband Josh isn't a fan, either, but he loved this roasted cauliflower and cheddar soup, and so did their toddler. It's creamy, without any cream or butter, and it looks just like potato and cheddar soup, which is everyone's favorite. And it's perfect for Meatless Monday. I'm going to give this dish a chance to change my mind about cauliflower. I'll let you know what happens.
