Chicken and wild rice soup, from Kitchen Parade
As I write this, I'm battling a cough and cold that refuse to quit. After countless cups of ginger tea and broth, I'm ready to give this chicken and wild rice soup from Kitchen Parade a chance to chase the blahs away. Chunks of butternut squash and mushrooms add sweetness and depth to the clear broth, and earthy, nutty wild rice makes sure you won't confuse this soup with chicken-and-rice soup from a can. The soup doesn't freeze well, but it will last in the refrigerator for a few days, by which time my cold should be all gone.
