Lydia, thanks so much for this deliciously healthy chicken gumbo.

I was looking for a nutritious dish that would compliment a chocolate and banana cake recipe I recently made and I think this is the one.

With all of that onion, carrot, chicken and celery this gumbo would not be too heavy or filling for a slice of banana cake to finish the meal.

Have you any other suggestions that I could try?

I've only had gumbo a few times, but I wish I had some of this for dinner!
