Vegetarian quinoa chili, from Two Peas & Their Pod

Vegetarian quinoa chili, from Two Peas & Their Pod (on Soup Chick).

Quinoa in chili? What a great idea! I'd never thought of it until I read this recipe for vegetarian quinoa chili from Maria of Two Peas & Their Pod. Quinoa provides thickening and, in combination with the beans in this dish, makes a complete protein. This isn't one of those chilis that needs to cook all day, so get inspired and make it for Football Sunday, or Meatless Monday. Or, make it tonight!
