If you love the Hungarian classic Chicken Paprikash, but chicken isn't your thing, you will love this vegetarian mushroom stew from Kalyn's Kitchen, packed with red bell pepper and onion, and seasoned with paprika. It has all of the flavors of the traditional stew, plus the richness from a bit of sour cream added at the end. Kalyn calls this a stew, though it isn't a dish that cooks all day, because, well, it tastes like a stew. It's perfect for a Meatless Monday main dish, served over noodles.
