Potato soup, from Thyme for Cooking
There are as many ways to make potato soup as there are cooks. Katie of Thyme for Cooking makes hers with Provencal herbs and ham, and a milk base. Leave the potatoes chunky, or smash them a bit with a wooden spoon against the side of the pot. Economical and hearty, potato soup with some crusty bread just might be the best lunch I can imagine.
