Isn't is fun when you can go to the ordinary grocery store and come home with all of the ingredients to make something extraordinary? Susan of FatFree Vegan Kitchen says you don't need to shop at an Indian grocery to make this eggplant and chickpea curry, though, if you do have a market in your area, you'll find a wider range of ingredients and fresh Indian spices. The combination of eggplant and chickpeas is one I don't make very often, so I'm intrigued by this stew, which I think would be just perfect for a Meatless Monday main dish.
