We are lucky here in New England to have the New England Soup Factory restaurants, and Susan of Food Blogga, a displaced Rhode Island gal living in Southern California, is even luckier, as she has a copy of the New England Soup Factory Cookbook. This vegetarian Indonesian carrot soup boasts a good amount of fresh ginger along with curry spices and rich coconut milk. This soup would be the perfect antidote to a chilly autumn Meatless Monday here in the northeast.
