Parsnip chowder, from Use Real Butter
Sigh and swoon. When I first read Jen's recipe on Use Real Butter for this parsnip chowder, all I could do was sigh and swoon. A chilly Rhode Island morning put me in the frame of mind for soup, and thinking about sweet parsnips, potatoes and onions, bound with cream and topped with bacon... well, I could think of nothing else I wanted more at that instant than a bowl of this soup. Jen suggests you could add scallops, or swap olive oil for the bacon and make a vegetarian version. I can't wait to try it.
