Parsnip chowder, from Use Real Butter

Parsnip chowder, with potatoes, bacon and cream (oh, my!), from Use Real Butter.

Sigh and swoon. When I first read Jen's recipe on Use Real Butter for this parsnip chowder, all I could do was sigh and swoon. A chilly Rhode Island morning put me in the frame of mind for soup, and thinking about sweet parsnips, potatoes and onions, bound with cream and topped with bacon... well, I could think of nothing else I wanted more at that instant than a bowl of this soup. Jen suggests you could add scallops, or swap olive oil for the bacon and make a vegetarian version. I can't wait to try it.

Oh, that chowder does look really really good, Lydia! With scallops, it would be beyond amazing!

Agree, that chowder by itself is heavenly, and with the scallops it would make it for a very very VERY special meal...

gotta keep this one in mind!
