Black bean and sweet potato soup, from Two Peas & Their Pod
Who could resist the colors of black bean and sweet potato soup at this time of year? Not Maria from Two Peas & Their Pod, who combines them with other goodness from roasted red pepper, tomatoes and green chiles in this vegetarian soup that would be a Meatless Monday main course in our house. Add cilantro, if it's your thing, or parsley, for a fresh contrast to the earthy beans. Make the soup ahead, and freeze it for worknight dinners, or double the recipe and serve it for a party, topped with sour cream, avocado and chips.
